In this exclusive interview, Chef Ansel reveals his inspirations, development process, and why his approach to pastries is changing the game in a city famed for indulgence and innovation.

How did you tailor your bakery’s concept at Caesars Palace to appeal specifically to a luxury-driven Las Vegas market?


For me, it was essential to do something truly different. The Las Vegas market is unique, especially when it comes to pastries—there are some options, but very few outstanding ones. Our goal was to create something that both aligns with our brand and introduces creativity, appealing to the city’s desire for luxury experiences. We’ve curated a line of pastries made especially for Las Vegas, in addition to classics like croissants and coffee shop items. This approach isn’t just about what tastes good but about crafting an experience that brings people through our doors and stands out in a city known for high standards and constant innovation.


What was the year that this bakery opened at Caesars Palace?


We opened three years ago, in 2022. Establishing our brand in such a dynamic city during this time posed its own challenges, but it’s been exciting to see our concept embraced by both locals and visitors from all over the world.


What are the exclusive items or creations that are only available here, and how do they embody the essence of the location?


One of our signature features is the croissant flavor that changes every month—something we designed specifically for the Las Vegas location. These flavors are never repeated and are not available at our New York location. Every first of the month, guests can come for a new surprise, which keeps people coming back. Las Vegas guests have had flavors like raspberry milk chocolate, popcorn, and cherry pistachio—there’s always anticipation for what comes next. Since starting this practice, we’ve created over 800 distinct flavors. This commitment to innovation and novelty reflects the ever-changing and luxury-driven culture of Las Vegas.

Can you give examples of some of the flavors you’ve created here?


We take pride in crafting unique flavors every month, never recycling an old combination. Just to name a few, we’ve offered raspberry milk chocolate—combining the tartness of raspberries with rich chocolate—a popcorn-inspired flavor for those who love savory-sweet treats, as well as cherry and pistachio, which plays with bright and nutty notes. The sheer volume—over 800 to 900 flavors since inception—means there’s always something new to discover for repeat visitors.


How do you develop those flavors?


All our flavor development is rooted in seasonality. For the summer, we focus on lighter, fruit-forward creations, while in winter we switch to richer flavors, like nuts, chocolates, and warming spices. This strategy ensures our offerings feel relevant and enticing year-round. We’re meticulous about our creative process; we keep a document called the “Cronut Bible,” which catalogs every flavor we’ve invented. This not only allows us to avoid repetition but also helps inspire future innovations by looking back at what we’ve accomplished.


What refinements have you built into the guest experience at Caesars Palace to make it feel more than just a patisserie? Do you host events or collaborations?


We really strive to set ourselves apart by focusing on frequent and thoughtful menu changes. While we don’t typically host outside events or collaborate with other businesses, our independence lets us channel all our energy into the products and customer experience. For added fun and convenience, we installed a Cookie Shot Machine outside the bakery—a vending machine that operates 24/7, letting guests grab cookies and other treats at any time, day or night. This playful yet practical feature has become a destination in itself and speaks to our commitment to surprise and delight guests.

What are your favorite things to do in Las Vegas when you’re not in the kitchen?

 

I love exploring new restaurants. Las Vegas is a culinary capital with a food scene that’s both unique and constantly evolving. Many of the world’s best chefs have set up shop here, drawn in by the resources hotels offer and the broad, appreciative customer base. There’s always inspiration around every corner, and I try to stay connected with the city’s dynamic dining landscape. The diversity and energy here keep things fresh for us as creators, as well.


How would you describe your clientele?


The clientele in Las Vegas is truly eclectic. Guests come from every corner of the country and the globe. Most visit for about three days, which means we’re always serving new faces from all walks of life. This diversity inspires us to keep innovating and ensures no two days are quite the same. It also means we can experiment with bold and playful ideas, knowing our audience is both adventurous and appreciative.


What items here would guests be surprised to discover are exclusive, not found anywhere else in the world?


The most unique offering is definitely our special croissant flavor, which is exclusive to this location and changes monthly. Our “DK” pastry is also a standout and has become our best seller. Visitors often tell us it’s unlike anything they’ve had elsewhere.


In addition, our sandwich selection and green menu options are crafted specifically for Las Vegas, offering savory choices that you can’t find in our other locations or even elsewhere in the city.


What are some favorites on the savory menu?


On the savory side, the egg sandwich consistently tops the list and is beloved for its satisfying, balanced flavors. We’ve recently introduced a croissant sandwich—another hit with our guests. And the croque monsieur, available here, is a generous, gooey classic loaded with cheesy bechamel and savory smoked ham. It’s hearty, comforting, and definitely a must-try!
